Crepes have always been one of my favorite things. Rob made me promise to make him crepes sometime so this is what he got.
For the crepe:
1.25 C flour
pinch of salt
3 eggs
1.5 C milk
2 T melted butter
Blend the milk, eggs, salt and butter together. Slowly add the flour. My mom recommends letting it sit for one hour, but I didn't most of the time. I also stole her lovely crepe maker which makes it really easy, but you can also use a skillet. Just pour barely enough batter to coat the bottom of the pan and cook until it turns light brown.
Mom's filling:
Mix sugar, cinnamon (I use a lot of cinnamon!) and melted butter together. I never measure this, I just melt 4 tablespoons of butter and then add cinnamon and sugar until it is at a consistency I want.
Rob's filling:
Fry up some turkey bacon, scramble some eggs with cheese and spices (I used black and cayenne pepper), and fill. Easy and delicious.
