1.25 C flour
.5 C unsweetened cocoa
1 t baking soda
.25 t baking powder
.25 t salt
1 C sugar
.5 C + 2 T softened butter
1 egg
Mix together the flour, cocoa, baking soda & powder, salt and sugar. Beat in the butter and egg. Drop teaspoons of batter on a wax paper lined cookie sheet 2 inches apart. Gently press balls flat (about 1/4 of an inch) and shape with a cookie cutter (does not have to be a circle).
Bake at 375 for 7-9 minutes
Filling:
.25 C softened butter
.25 C veg. shortening
2 C sifted powdered sugar
2 t vanilla
Mix until fluffy. Spread on one cookie and cover with another cookie.
